PURCHASING OPTIONS

1) Bulk freezer beef and pork orders 

  • This is more of a wholesale type transaction.
  • Customers purchase whole, halve, or quarter beef, or whole or halve hogs.
  •  You receive a proportional share of all cuts of the animal you purchase (steaks, roasts, ground beef or sausage).
  • Typically this is the lower cost per pound option for customers. 

2) Retail sale orders

  • You purchase the exact amount of the exact cuts of beef or pork that you wish to buy. 
  • This is typically a lower up front cost option for customers.
  • Does not require large freezer space for storage. 

BEEF DETAILS AND PRICING

 

THE SIMPLE DESCRIPTION    

  • Freezer beef is typically sold by either a whole beef, a half beef or quarter beef. 
  • Simply put, a whole beef is all cuts of a beef, a half beef is 1/2 of the beef, and a quarter beef is 1/4 of the beef.
  • Freezer beef is typically sold by hanging weight. Hanging weight is the weight of the carcass after the animal is processed and the carcass is placed on the hanging rail at the slaughter house. Generally speaking, hanging weight is 60% of hoof weight; the weight of the animal alive and standing on hoof. 
  • The processing costs (slaughtering, cutting and trimming) are also charged by hanging weight. 
  • Take home weight (the amount of beef you put in your freezer) can vary on several factors, but is typically 50 to 60% of hanging weight. Based on these numbers, you could expect a 1300# live weight steer to produce a hanging weight of 780#, and yield roughly 390# to 468# of meat. Your choices of cuts will have a direct effect on the amount of meat you actually bring home.
  • Processing cost can vary depending on the choices you make regarding cuts and de-boning, but a 1300# live weight steer would cost roughly $800 to have processed.


The total cost to the customer would break down as follows:

  • Whole beef- 1300# live weight would be 780# carcass weight
  • 780# x $4.00= $3,120.00 for the beef
  • 780# x $1.05 = $819.00 for processing
  • Total WHOLE beef price of $3,939.00 for roughly 468# of meat = $ 8.42 +/- per pound of beef in your freezer at 60% yield, a 50% yield (390#) will equal $ 10.10 per pound.


  • Half beef- would be 390# carcass weight
  • 390# x $4.00= $1,560.00 for the beef
  • 390# x $1.05= $409.50 for processing
  • Total HALF beef price $1,969.5.


  • Quarter Beef- would be 185.50# carcass weight
  • 185.5# x $4.00= $782.00 for the beef
  • 185.5# x $1.15= $224.83
  • Total Quarter Beef price $1,006.83

PORK DETAILS AND PRICING

  • As our customer base continues to grow, we have been asked numerous times by our customers if we sell hogs (pork) or know of a local source for good quality hogs for freezer pork. To help serve our customers, we are now offering hogs for purchase as well. These hogs, like our cattle will be farm born and raised, grain finished. We will deliver them to Camden Locker LLC for processing just as we do with our beef for your convenience. 


Hogs are sold by either WHOLE or HALF (quarters are not available).

Our hogs are priced at $1.85 per pound hanging weight

Processing costs are as follows:

$1.30 per pound slaughter fee and processing (hanging weight)

$17.00 per hams smoked and cured

$15.00 per bacon slab smoked and cured


A hog weighing 250# live weight would weigh 175# hanging weight, and yield roughly 140# of retail cuts, depending on your personal selections.


A whole hog would cost:


  • Whole Hog, 250# live weight= 175# carcass weight
  • 175# x $1.85 = $323.75 for the pork
  • 175# x $1.30= $227.50 for processing 
  • WHOLE Hog total is $551.25, total with 2 hams and 2 slabs of bacons is $615.25


  • Half Hog- 87.50# carcass weight
  • 87.50# x $1.85 = $161.88
  • 87.50# x $1.85= $113.75
  • HALF Hog total is $362.75, total with 1 ham and 1 slab of bacon is $394.75
